June Bug Veggie Juice

This is a refreshing and hydrating way to enjoy the flavors of zucchini, cucumber, and tomatoes, along with a variety of other garden vegetables. The addition of basil and lemon adds a burst of freshness. Adjust the seasoning and quantities based on your taste preferences and savor this nutritious and savory vegetable juice!

Benefits: Zucchini and cucumbers are hydrating; tomatoes provide vitamins A and C.

Ingredients:

  • 1 zucchini, sliced
  • 1 cucumber, peeled and sliced
  • 2 large tomatoes, chopped
  • 1 celery stalk, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1/4 red onion, chopped
  • 1 garlic clove, minced (optional, for added flavor)
  • Handful of fresh basil leaves
  • 1 lemon, peeled
  • Salt and black pepper to taste
  • 1 cup cold water
  • Ice cubes (optional)

Instructions:

  1. Prepare the Ingredients:

    • Slice the zucchini and cucumber.
    • Chop the tomatoes, celery, red and green bell peppers, and red onion.
    • Mince the garlic clove (if using).
    • Peel the lemon, ensuring to remove the bitter white pith.
  2. Juicing:

    • In a juicer, combine the sliced zucchini, sliced cucumber, chopped tomatoes, chopped celery, chopped red and green bell peppers, chopped red onion, minced garlic (if using), fresh basil leaves, and peeled lemon.
    • Juice the ingredients. If you don't have a juicer, you can use a blender and strain the juice afterward.
  3. Season:

    • Add salt and black pepper to taste. You can start with a pinch and adjust according to your preference.
  4. Add Water:

    • Pour the cold water into the juicer or blender to help extract the juice and dilute it slightly.
  5. Optional: Add Ice:

    • If you prefer a chilled juice, you can add ice cubes to the freshly squeezed juice.
  6. Mix:

    • Stir the juice to combine all the flavors.
  7. Serve:

    • Pour the Veggie Juice into glasses and serve immediately.
  8. Garnish (Optional):

    • Garnish with a slice of cucumber or a sprig of fresh basil for a decorative touch.
