July Veggie Island Juice
This Veggie Island Juice is a refreshing and savory way to enjoy the flavors of tomatoes, corn, and cucumbers along with other nutritious vegetables. Ingredients:
- 2 large tomatoes, chopped
- 1 cup corn kernels (fresh or cooked)
- 2 cucumbers, peeled and sliced
- 1/2 red onion, chopped
- 1 celery stalk, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 garlic clove, minced
- Handful of fresh parsley leaves
- 1 lemon, peeled
- Salt and black pepper to taste
- 1 cup cold water
- Ice cubes (optional)
Instructions:
Prepare the Ingredients:
- Chop the tomatoes, peeled cucumbers, red onion, celery, red and green bell peppers.
- Mince the garlic clove.
- Peel the lemon, ensuring to remove the bitter white pith.
Juicing:
- In a juicer, combine the chopped tomatoes, corn kernels, sliced cucumbers, chopped red onion, chopped celery, chopped red and green bell peppers, minced garlic, fresh parsley leaves, and peeled lemon.
- Juice the ingredients. If you don't have a juicer, you can use a blender and strain the juice afterward.
Season:
- Add salt and black pepper to taste. Start with a pinch and adjust according to your preference.
Add Water:
- Pour the cold water into the juicer or blender to help extract the juice and dilute it slightly.
Optional: Add Ice:
- If you prefer a chilled juice, you can add ice cubes to the freshly squeezed juice.
Mix:
- Stir the juice to combine all the flavors.
