December Winter Veggie Juice
Creating a juice with cruciferous vegetables rich in vitamins and antioxidants may not be a traditional choice due to their dense and fibrous nature. However, you can incorporate these vegetables into a nutrient-packed smoothie or elixir. December Winter Veggie Juice combines the robust flavors of brussels sprouts, cabbage, cauliflower, kale (cruciferous vegetables), and winter squash with the sweetness of apple and the creaminess of almond milk. Chia seeds and flaxseeds add extra nutrients and a subtle nutty flavor.
Ingredients:
- 1 cup brussels sprouts, trimmed and blanched
- 1 cup cabbage, shredded
- 1 cup cauliflower florets, steamed
- 1 cup kale leaves, stems removed
- 1 cup winter squash, peeled and diced
- 1 apple, cored and sliced
- 1 tablespoon chia seeds
- 1 tablespoon flaxseeds
- 1 tablespoon honey or maple syrup (optional, for sweetness)
- 1 cup almond milk or any preferred plant-based milk
- Ice cubes (optional)
Instructions:
Prepare the Ingredients:
- Trim and blanch the brussels sprouts until slightly softened.
- Shred the cabbage.
- Steam the cauliflower florets until tender.
- Remove stems from kale leaves.
- Peel and dice the winter squash.
- Core and slice the apple.
Blending:
- In a blender, combine the blanched brussels sprouts, shredded cabbage, steamed cauliflower, kale leaves, diced winter squash, sliced apple, chia seeds, flaxseeds, honey or maple syrup (if using), and almond milk.
Optional: Add Ice:
- If you prefer a chilled elixir, you can add ice cubes to the blender.
Blend:
- Blend the ingredients until smooth. If the consistency is too thick, you can add more almond milk.
Taste and Adjust:
- Taste the elixir and adjust the sweetness or thickness according to your preference. You can add more honey, maple syrup, or almond milk if needed.
Serve:
- Pour the Winter Veggie Boost Elixir into a glass and serve immediately.
